Kale: super food, super delicious

Kale is my new favorite food. Just look at all of the nutrients in these greens!
Nutients in Kale (% Daily value of 1 cup, boiled, 37 calories)
Vitamin K 1,372.6%
Vitamin A 192.4%
Vitamin C 88.8% (53.3 mg)
Manganese 26%
Dietary Fiber 10.4% (2.6g)
Calcium 9.4% (93.6 mg)
Protein (yes, protein) 5% (2.5g)

Nice, but let’s be real. Plain steamed kale tastes like foot. Never fear, a recipe from Vegan Dad’s blog turns these super greens into some of the most delicious tortillas I’ve ever made.

Spring gardening :)

I bought a baby tomato plant today and re-potted my basil. My garden is officially growing!

I like to say I've been vegan since age 5, but no one's perfect. There was that time in high school when I wanted to know what pepperoni pizza tasted like. And then there was that time in 2007 when I lived in China for 9 months and found it important to experience Chinese culture through food. Lots and lots of tasty, greasy, not-so-vegan food. OK, so I rock suck at veganism. But I really do prefer vegetables to meat.

And I've recently become much more passionate about my vegan lifestyle. So now I feel the urge to share. Check out these pics of delicious food I've created in the past and look forward to future posts/recipes to come.
